Ultimate Cheeseburger

1-1/3 lb ground beef
3 green onions, minced
1 shallot, minced
2 cloves garlic, minced
2 T Worcestershire sauce
2 T minced parsley
½ t paprika
salt and pepper
2 Vidalia onions, peeled, ends removed and sliced into 4 slices each
olive oil
8 slices Applewood smoked bacon
4 slices of each; Jack and American cheese
4 onion hamburger buns, cut in half and lightly toasted

Place beef into a large bowl and mix in first 6 ingredients. Season with salt and pepper and shape into 4 patties. Rub both sides of the onion slices with olive oil and season with salt and pepper. In a sauté pan cook bacon until crispy, drain off excess fat and set aside.

Heat the BBQ to a medium hot fire. Cook the onions on the grill for about 5 to 6 minutes per side. They should be nicely caramelized and pliable. Place burgers on the grill and cook 3 to 4 minutes, flip and add the cheese. Cook for another 3 to 4 minutes for medium rare. Remove from grill and assemble just the way you like it!

Grilled Vidalia Onions
