Tomato & Lemon Cucumber Salad with Feta Cheese

2 C yellow and red cherry tomatoes, cut in half
4 lemon cucumbers, peeled, cut into quarters and thinly sliced
¼ red onion, diced
1 small bunch watercress, chiffonade
salt and pepper
Balsamic Vinaigrette (recipe follows)
1-8 oz package feta cheese, cut into 8 triangular wedges

Combine first three ingredients and toss with dressing. Immediately before serving, mix in the watercress and season with salt and pepper. Serve with feta cheese on the side.

Balsamic Vinaigrette
1 shallot, minced
1 clove garlic, minced
3 T Balsamic vinegar
1 T Dijon mustard
salt and pepper
4 T olive oil

Whisk first 4 ingredients and season with salt and pepper. Whisk olive oil in a steady stream, to make an emulsion. Chill until you are ready serve.

Serves 8
