100% Sauvignon Blanc

Early in the growing season, careful manipulation of each vine occurs to make sure the right amount of sun and shade penetrates the canopy. This allows the fruit to reach maximum maturity without losing any of its vivid fruit character. The process is called ‘leaf thinning’ where leaves are pulled from either the ‘morning side’ or the ‘afternoon side’ to increase the amount of sun exposure on the clusters. Timing and execution of this process was particularly important in the 2010 vintage due to the difficult growing season, and although carried out every year, had an enormous positive impact on the wine.

The expression of the vineyard through its aromatics is carefully preserved in the winemaking process by allowing as little air exposure as possible to the juice. The wine is fermented in 70% stainless steel, which allows the bright flavors to remain and 30% in neutral French oak, which gives a richness, and complexity not often seen in this variety.

Our 2010 Sauvignon Blanc hints of honeydew melon, star jasmine and sweet Key limes. The palate offers bright fresh fruit characters of passionfruit and lychee with well balanced acidity and fabulous texture.
