Just in time for summer, we are proud to release our 2011 Bevill Vineyard Sauvignon Blanc. Reminiscent of our 2009 vintage, the nose explodes with honeysuckle, evolving into aromas of orange blossom and sweet summer hay. The mouth feel is noticeably creamy with balanced acidity from the stainless steel/neutral-oak hybrid fermentation. The juicy flavors of lychee and passion fruit dance a pas de deux until notes of melon provide a dramatic finish.
If you have any left when summer is through, savor it with seafood risotto or seared scallops to welcome the changing seasons.

We have been making Sauvignon Blanc from Duff Bevill’s vineyard for several years and are pleased to announce that this year it has been elevated to one of our Vineyard Designated wines.
Our 2008 Bevill Vineyard Sauvignon Blanc is bright, brisk and bursting with flavor. Aromas of lime, tropical fruit and orange zest are followed by fresh flavors of ripe melon and citrus. The flavors finish with mouthwatering acidity. The wide variety of flavors and aromatics was enhanced by removing the leaves from only the morning-sun side of the vines. This work in the vineyard allowed some of the fruit to be fully exposed to the temperate morning sun and successfully encouraged the development of an incredibly wide variety of the aromatics we look for in Sauvignon Blanc.
All of the wine was fermented at a cool temperature in stainless steel. When the fermentation was almost complete 38% of the wine was transferred to three-year old French oak barrels for its final week of fermentation. This time spent in barrels helped to add a round texture and the long lingering flavors.
The perfect accompaniment to a warm summer afternoon, and an excellent pairing with oysters on the half shell, grilled prawns or pan seared scallops.

Year after year, our winemaking team creates the perfect crisp and delicious wine…our Bevill Vineyard Sauvignon Blanc. An important early step in the process of shaping flavor is directing a precise leaf pulling on only the morning side of the vine. This allows for an appropriate mix of sun and shade on the grapes which translates to our signature flavor range. Bright, clean acids are a great starting point from which to craft this world-class white.
Round in mouth-feel yet balanced by bright acidity, our 100% Sauvignon Blanc presents fresh flavors of Meyer lemon, Asian pear & star fruit along with enticing aromas of jasmine blossom and orange flowers. To maintain focus on the articulate Sauvignon Blanc fruit, no new oak is used. Eighty percent of the cuvee is fermented and aged in stainless steel, which promotes crispness, while twenty percent is fermented and aged in 3-year old neutral French oak barrels, to promote richness. A delicious and mouthwatering citrus character lolls on the tongue in the long and lingering finish.

Early in the growing season, careful manipulation of each vine occurs to make sure the right amount of sun and shade penetrates the canopy. This allows the fruit to reach maximum maturity without losing any of its vivid fruit character. The process is called ‘leaf thinning’ where leaves are pulled from either the ‘morning side’ or the ‘afternoon side’ to increase the amount of sun exposure on the clusters. Timing and execution of this process was particularly important in the 2010 vintage due to the difficult growing season, and although carried out every year, had an enormous positive impact on the wine.
The expression of the vineyard through its aromatics is carefully preserved in the winemaking process by allowing as little air exposure as possible to the juice. The wine is fermented in 70% stainless steel, which allows the bright flavors to remain and 30% in neutral French oak, which gives a richness, and complexity not often seen in this variety.
Our 2010 Sauvignon Blanc hints of honeydew melon, star jasmine and sweet Key limes. The palate offers bright fresh fruit characters of passionfruit and lychee with well balanced acidity and fabulous texture. What could be better than a glass of Bevill Vineyards Sauvignon Blanc on a warm summer’s day?
