Our 2011 Chardonnay was whole cluster pressed and barrel fermented in the coolest part of the winery to ensure that the fruit aromatics were kept bright and balanced. For the fifth year, we have used DARGAUD et JAEGLE barrels in our Chardonnay program. DJ is one of the few coopers in France producing water-bent barrels. The oak is heated by soaking in hot water before shaping then toasted over a fire. The result is that any green or resinous flavors and tannins are leached from the wood which means that they are not in the wine!
The long, cool growing season of 2011 produced Chardonnay that is impeccably balanced with bright acidity and agility. The nose is reminiscent of baked apple pie with hints of buttery crust and just a touch of oak spice. On the palate, surprising notes of lemon crème and ripe peach compliment the bright apple and pear flavors and will have you calling for another glass.
